The key to getting coffee from carpet is to start the process right after you spill it. Grab some paper towels or a regular towel and soak up as much of the coffee as possible. You are going to want to do this as fast as you can because time is essential. Keep in mind, you are blotting/dabbing up the spilled coffee. While your instincts may want to rub the carpet with your paper towels, that is actually going to make the problem worse. Next, you are going to want to spray lukewarm water on the stain.
